Abstract:Human society embraces rich and diversified culture, among which food culture shows specific power. Food cultures, in East and West countries, are developed differently because of the different influence of factors like geography, climate, customs, and habits, raw material, taste, cooking method, the diet habits, history and etc. With the fast process of globalization, Chinese and Western food cultures get chances to inter-related and exchanged. Take chopsticks, knife, and forks, the daily table ware as examples, originally, they were made by people from different backgrounds and the materials, forms, styles etc are used to display the users' ideas and cultural denotations;
Recently, chopsticks and western table ware appear side by side on the table frequently. It seems there is less distinction in people's attitude toward daily living style. Therefore this paper starts to discover “The Alpha and Omega “of tableware in order to explain the fusion process and cultural integration. One thing, hopefully to be proved clearly is that, globalization helps people getting further understanding and comprehensive acceptance with each other.

摘要:由于地域,气候,风俗,习惯,原料,口味,烹调方法等诸多因素的限制和差异,饮食器具具有很强的文化地域性特点。随着全球化进程的深入与扩展,中国和西方的饮食文化也在碰撞中不断地互补和整合。筷子和刀叉虽不很起眼,但从形式和内涵都各有自己文化的特点。餐具与饮食习惯,生活方式,民族特色等都有千丝万缕的联系。
本文在了解文化的交流和融合的现实的前提下,借用筷子和刀叉这种常用的餐具为媒介,希望以微观的研究的方法揭示餐饮习俗变迁背后的深刻文化内涵,并期待通过这一研究可以进一步了解在全球化的前提下,在文化交流和发展过程中东西方文明是如何在展现自己的文化特质的同时逐渐相互融合并取长补短的。
