摘要:本实验采取超声水提取法和超声结合酶法研究了红薯渣中可溶性膳食纤维提取的工艺条件,并对其功能进行探讨。实验结果表明:超声水提取最佳工艺条件为料液比1:30,超声时间25min,超声功率150W,红薯渣中可溶性膳食纤维的提取率为5.64%;超声结合酶法提取最佳工艺条件为加酶量为1.5%,料液比1:30,时间20min,功率100W,红薯渣中可溶性膳食纤维的提取率为7.29%。红薯渣中可溶性膳食纤维对OH和O2-自由基都具有较强的清除能力,其50%清除率对应的红薯渣中可溶性膳食纤维(SDF)的浓度(IC50)分别为3.94mg/mL、0.35mg/mL;红薯渣中可溶性膳食纤维对DPPH有一定的清除作用,清除率可达40%以上。红薯渣中可溶性膳食纤维的持水力为356%,膨胀力为13.26mL/g。

Abstract: In this experiment, technological conditions for extraction of soluble dietary fiber in sweet potato residue with ultrasound water extraction and ultrasoud combined with enzymatic were researched and its funtions were studied.The test results showed that the optimal condition of ultrasound water extraction were material to liquid ratio 1:30, ultrasonic time 25 min, ultrasonic power 150w, the extraction rate of soluble dietary fiber in sweet potato residue was 5.64%; the optional condition of ultrasound combined with enzyme extraction were enzyme volume 1.5%, material to liquid ratio 1:30, ultrasonic time 20 min, ultrasonic power 100w, the extraction rate of soluble dietary fiber in sweet potato residue was 7.29%. The soluble dietary fiber of sweet potato residue has a high scavenging activity onOH andO2- free radical, the IC50 of soluble dietary fiber was 3.94mg/mL,0.35mg/mL respectively; the soluble dietary fiber has certain scavenging action to DPPH, the percentage clearance can reach 40%. The expansion capacity and water holding capacity of soluble dietary fiber in ginger were 356% and 13.26mL/g respectively.
